Grilled Wild Mushroom Strudel
Tantalise your dinner guests with this flaky, buttery appetiser chock full of earthy mushrooms and healthy spinach.
8 ounces fresh oyster mushrooms
8 ounces fresh portabello mushrooms, stems removed
8 ounces fresh shiitake mushrooms, stems removed
Olive oil
Salt and pepper
5 ounces fresh spinach leaves
1 cup heavy cream
5 sheets phyllo dough
1/2 cup butter (1 stick), melted
Brush mushrooms clean with a damp paper towel. Brush with olive oil and season with salt and pepper. Place the mushrooms over Direct Medium heat and grill 10 to 15 minutes or until tender. Let cool; discard base of oyster mushrooms just where stems attach to each other.
Chop mushrooms roughly. Place in a strainer and allow any excess moisture to drain away.
In skillet, sauté spinach in olive oil until wilted. Add cream and simmer until reduced by half, about 12 minutes. Stir in mushrooms.
On waxed paper lay one sheet of phyllo dough. Brush phyllo with butter and cover with second sheet. Brush second sheet with butter. Continue layering and brushing sheets until all five are buttered.
Place mushroom mixture on the long edge of the phyllo dough and roll toward the other edge. Fold over edges to seal. Place on an insulated baking sheet, seam side down. Place in centre of cooking grate and cook over Indirect Medium heat 15 to 20 minutes or until nicely browned on top. Cut into 2-inch pieces.
Makes 8 servings.

Oozing Cheesy Bread
We, especially my 12 year old daughter, love these!
Make some bread dough, any recipe will do, but using interesting flours or herbs in it is nice.
Shape into egg sized balls.
Make a hole in the middle of each and stuff with a big cube of your favourite cheese (let everyone choose their own).
Seal the dough around the cheese.
Leave to rest in a warm place for a while.
To cook, just pop on the BBQ for a few minutes, turning frequently, until toasted and risen
Eat & enjoy! they just ooze!
These are also delicious cold, but to be honest we always think we have made too many, but they all get eaten. KIds enjoy helping to make them.Serve with loads of salad, BBQ'd meat or fish and nice wine.

Grilled Sweet Potato Coins
Blanching is the secret here: It locks in flavour and colour for exceptionally flavourful sweet potatoes.
1 quart salted water
2 small sweet potatoes (about 1 pound total)
Ice water
1/4 cup vegetable oil
1 teaspoon salt
In a 2-quart saucepan bring salted water to a boil. Peel and slice sweet potatoes into 1/4- to 1/2-inch thick disks. Add disks to boiling water; blanch for 2 to 3 minutes. Remove sweet potatoes from water and plunge into a bowl of ice water to chill.
Remove from water, dry, and place in bowl or large plastic bag. Pour oil over sweet potatoes; toss to coat.
Place sweet potatoes in centre of cooking grate. Grill 4 to 6 minutes, turning once during cooking time. Remove sweet potatoes from grill; sprinkle with salt.
Makes 4 servings.

Italian Stuffed Tomatoes BBQ Recipe
This delicious take on the tomato makes the most of summer’s bounty with ingredients fresh from your garden. Serve as an appetiser for eight or a light lunch for four.
4 large, firm tomatoes
Salt
Freshly ground pepper
1 pound hot or mild Italian sausage
1/3 cup cooked rice
1 tablespoon chopped fresh parsley
2 leaves fresh basil, julienne
Olive oil cooking spray
For the sauce:
Pulp from tomatoes
1 small can tomato sauce
Salt
Freshly ground pepper
Sugar
3 tablespoons sour cream
Cut off top quarter of each tomato; set tops aside. Carefully scoop out and reserve tomato pulp. Season empty tomato cavities with salt and pepper. Set aside.
Mix sausage with rice, parsley, and basil. Fill tomato cavities with sausage mixture and replace tomato tops. Spray tomatoes lightly with oil and place on a baking sheet. Place baking sheet in centre of cooking grate and grill for 20 to 25 minutes.
Meanwhile, make the sauce: Combine reserved tomato pulp with tomato sauce. Add salt, pepper, and sugar to taste; bring to a boil. Remove from heat. Add sour cream and adjust seasoning to taste. Place some sauce on individual plates; top each plate with a stuffed tomato. Serve warm with grilled zucchini and crusty baguettes, if desired.
Makes 4 servings.

haha actually all these arh must prepare at home lor, then bring to sch prepared alr. bbq is just to heat up? haha.. upon consideration i imagine the state of the tomatoes at the end of the day to be not too pleasant.. :/

Marinated Grilled Tomatoes BBQ Recipe
It was tough to improve on the hallowed tomato, but this recipe seems to do the trick.
2 tablespoons catsup
2 tablespoons olive oil
2 tablespoons red wine vinegar
1 teaspoon chopped fresh thyme
1/2 clove garlic, finely chopped
1/2 teaspoon salt
White pepper to taste
3 large tomatoes, sliced 1 inch thick6 leaves
Boston lettuce
In a small bowl whisk together catsup, oil, vinegar, thyme, garlic, salt, and white pepper. Place tomatoes in re-sealable plastic bag. Pour marinade over tomatoes, seal bag, and marinate for 1 hour. Remove tomatoes from marinade; reserve marinade.
Place tomatoes in centre of cooking grate. Grill 2 minutes, turning once halfway through grilling time.
Dip lettuce leaves in remaining marinade. Top each lettuce leaf with a grilled tomato slice.
Makes 6 servings.

Italian-Style Grilled Corn on the Cob BBQ Recipe
An easy to get great flavour from a summertime favourite. You may never eat plain corn again!
4 ears fresh sweet corn, in husks
3 to 4 tablespoons olive oil or melted butter
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh parsley
1/4 cup grated Parmesan cheese
Salt and pepper
Soak corn in cold water for 30 minutes; drain. Meanwhile combine oil, oregano, and parsley; set aside.
Pull back husks on each ear of corn, leaving husks attached at base. Remove corn silk. Brush corn with seasoned oil. Fold husks back around corn; tie at top with string or strip of corn husk.
Place corn in centre of cooking grate. Grill 12 to 14 minutes, turning once halfway through grilling time. Carefully remove husks. Sprinkle corn with cheese; season with salt and pepper to taste.
Makes 4 servings.

Apples with Crumb Topping BBQ Recipe
Crumb topping is a favourite on almost any dessert, but wait until you try it on grilled apples. Use apples that are good for baking such as Winesap, Rome Beauty, or Granny Smith.
For the topping:
1/2 cup quick-cooking (not instant) oatmeal
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/4 teaspoon ground cinnamon
1/4 cup unsalted butter, cut into small pieces
1/2 cup chopped pecans
4 large baking apples, halved crosswise through the centre, cored
2 tablespoons butter, melted
1/2 cup heavy cream
To make the topping: In a medium bowl combine the oatmeal, flour, brown sugar, and cinnamon. Add the butter and work it in evenly with a fork or your fingertips. The crumbles should be the size of peas. Stir in the pecans. Set aside.
Brush the cut side of the apples with the melted butter. Arrange the apples cut side down on the grill and cook over Direct Medium heat for 20 minutes, turning once halfway through grilling time. Remove from the grill.
Mound the topping over the cut side of the apples, distributing evenly. Return apples to the grill and continue grilling over Direct Medium heat until the topping is golden brown, about 6 minutes. Serve warm or at room temperature with the heavy cream drizzled over the apples.
Makes 4 servings

Warm and Chewy Cereal Treats BBQ Recipe
This jazzed up version of a classic snack adds fun with chips of toffee and chocolate.
6 cups (7-1/2 ounces) crisp rice cereal
1 6-ounce package milk chocolate English toffee chips
4 cups (6 ounces) mini marshmallows
3 tablespoons butter
1 teaspoon vanilla extract
1/2 cup mini chocolate chips, divided
2 8 x 5-1/4–inch foil disposable pans
In large bowl combine cereal and toffee chips.
In a 2-quart glass bowl, microwave marshmallows and butter on high for 2 minutes. Stir to combine. Microwave on high for 1 additional minute. Add vanilla extract and stir well. Pour over cereal mixture; stir until cereal is well coated.
Press mixture immediately into two 8 x 5-1/4–inch disposable lightly greased foil pans, spreading evenly. Cool.
Sprinkle each pan with 1/4 cup mini chocolate chips. Place pans on cooking grate for 2 to 3 minutes or until warm and chocolate is soft. Remove from heat and spread chocolate over cereal evenly. Cut into 16 bars. Serve immediately.
Makes 16 servings.

haha okay i think that is enough recipes to dream about.. im thinking we assign ppl to do diff foods.. and like i mentioned earlier, all strange baking ingredients can(hopefully) be bought from the amk branch of phoon huat opp amk mrt. those ppl in charge can make those foods that take a long time to prepare the night before(sunday)... also be prepared to spend abit huh? those foods dont sound cheap :/ hahah but who wants lousy food at our first ever swallow bbq right! er that said, i guess we'll still be having sausages, chicken, marshmallow, baguettes, common foods etc. heh anyone dosent feel a need for those can say so.

drinks we'll just buy the 1.5litres f&n or sth; the weird beverages on the site sound demanding... personally i am against f&n(too much processed sugar) and would prefer er, blueberry tea, peach tea, etc. hehehh.. i can buy those at like $1.65 per 1.5litre bottle!... if all of u suddenly think like me and support my idea.
volunteer to do the foods if u wanna be the first one tasting them at home. just dont 'taste' too much okay, leave some(ALOT) for us ((:
